"Portraying Chicomecoatl, ancient goddess and protector of corn, this painting honors indigenous tradition and highlights the Mexican delicacy known as Huitlacoche.
Chicomecoatl was goddess of fertility and was said to carry the Sun on her back as protection, in this piece she’s holding a basket of Huitlacoche, a mushroom also known as “corn smut” or “Mexican Truffle”.
Huitlacoche grows randomly on organic corn, and while it is treated as a blight in other countries, in Mexico you can eat it as a local delicacy, a seasonal treasure filled with nutrients and a smoky flavor."
