"My childhood memories were of a van arriving into the village and the fishermen would play out a high-pitched sound through a large conch shell followed by the announcement of his stock SARDINE, SARDINE! or tuna, flying fish, dolphin, red snapper to name a few.
This picture is of a local fishmonger cleaning a dolphin fish; he is based at the fishing port called ‘The Pond’ in Vieux Fort, St. Lucia. The fishmonger in the picture beams proudly that he was chosen over his counterpart. His wooden workstation has a slightly curved top warn out from the chopping of fish, which is regularly washed down, by fresh seawater, the discarded guts become food to other fish of the ocean.
He started the performance before our eyes proud of his accurate skills he then offers his customers a choice of fillet or cut steaks with his well-kept sharp knives."
